FIFTY YEARS AGO?
As I was navigating my homemaking/childrearing days, I did a lot of cooking. I have always loved the old recipes, passed down through generations so I preferred cookbooks put together by social groups, PTAs and church ladies rather than slick publishing house printed volumes by cooks with name recognition.
The spiral bound, limited print collections held the very best of the best. IMHO.
I especially loved the recipes that were shortcuts - using the fewest ingredients. I have passed down those now ragged treasures to my youngers but I still have one titled Three Ingredients Recipes.
One of the most amazing three ingredient cookie recipe I have made and tweaked over the years was called ‘Impossibles’.
The original recipe:
a cup of peanut butter, (plain or crunchy)
blend with one egg
add a cup of sugar
Mix into a stiff ball, divide into 12 balls, squish down with a fork, bake 350˚ for 11 minutes, remove and cool.
BOOM! Delicious peanut butter cookies!
Years flew by and down the road, when I entered my low carb era, I did some fine-tuning to the recipe. I added a cup of almond flour to bulk it up and I substituted the sugar for a (then) new sugar substitute called Whey Low - Whey Low. Made from lactose (milk) not sucrose (cane sugar), it does exactly what sugar does (meaning it will crystalize unlike other artificial sweeteners) except it’s one fourth the calories and carbs with no aftertaste.
Then, even further down the road, for friends who are diabetic, I switched to the Whey Low diabetic version. Not sure how they do it but it is low glycemic so it does not raise blood sugar.
Some impossibilities in life must remain mysteries.
So, with a few adjustments I continued to make my current version of Impossibles. Low glycemic, low carb and gluten free. But still very tasty. A twelve cookie batch disappears very quickly.
1 cup peanut butter (plain or crunchy)
1 egg
1 cup almond flour
1 cup Whey Low diabetic sugar
350˚ 11 minutes
Imagine all the history in handed down recipes. Of course, I will never know who or where the original came from but I will always be grateful for the committee of ladies who included it in their cookbook.
So, the challenge, this time, was - could I possibly write lyrics about a peanut butter cookie recipe?
