It has become a staple for me since I cut out sweets and I can't do gluten. Using the Whey Low diabetic sweetener is key for me but regular sugar is fine if that's not a problem.
I did an experiment yesterday - I swapped out the almond flour with quick oats and added a tsp of cinnamon. Wow! Oatmeal cookies! I am going to make another batch this morning prepping for Icemageddon 2026.
Interesting! I had never heard of three ingredient cookies, but they would have come in handy back in the day. Now, on the rare occasions that I make them, I still love the cut up, oil and flour stained and scribbled upon recipes in my files.
I've actually made the Impossibles from the recipe I saw somewhere, probably a magazine when I use to read magazines. I'm not one for peanut butter cookies but the rest of my gang are so it was a hit.
Honestly I don't even recall what cookbook I found it in except I can make a good guess it was a PTA or church ladies compilation. I have made other tweaks over the years - like adding a handful of dark chocolate chips. I am considering trying substituting the almond flour for oats just to see if I can get an oatmeal cookie flavor.

Instant rice, margarine, salt
Instant rice, margarine, Brewer's Yeast powder
Instant rice, margarine, teriyaki sauce
Instant rice, margarine, kung pao sauce
Instant rice, margarine, orange juice
Oh! Bet the orange juice adds a unique flavor!
